Military life can be a bit hectic at times. There are PCS moves, deployments, TDY’s, homecomings and so much more to worry about. Add in prepping for a new baby and it can feel pretty chaotic.

If you’re expecting a new baby soon, you might be in the nesting phases. Whether it’s cleaning the house, putting together the nursery or batching up food for your spouse/kids to have at least some home cooked meals—a majority of us are organizing and making sure everyone else is okay. In addition to that, you might be craving some of the not so good things. For me, it was fast food french fries and PB&J—not exactly the healthiest of options.

One of my other cravings during my pregnancy was oatmeal topped with granola. So, I was excited for Aurora to share one of her recipes for a “Simple Granola” that can easily be batched up for a snack and as a topping to other items like yogurt.

The Ultimate New Mom’s Cookbook

Makes about 7 cups

Here’s a recipe that will help you prepare for countless breakfasts and snacks. You can buy most of the ingredients in bulk, saving a lot of money in the process.

This recipe is from The Ultimate New Mom’s Cookbook, written by chef and mom, Aurora Satler, as a guide for new parents to make the culinary journey from pregnancy through the toddler years so much simpler.

This granola is also very simple, packed with fiber and can be made from start to finish in under 30 minutes.  

Ingredients:

5 cups old fashioned rolled oats

½ cup of unsalted sunflower seeds (or pecans)

½ cup olive oil

½ cup honey

¼ cup good maple syrup

½ teaspoon salt

Preheat your oven to 325F. Mix dry ingredients (oats through almonds) in a large bowl.  

In a small bowl, mix olive oil, honey, maple syrup and salt. Pour your honey mixture over your oats and stir very well until every oat is coated.  

Divide oat mixture between two large baking sheets. Spread oats into one layer and bake in oven on two center racks for 10 minutes. Toss the granola with a wooden spatula and rotate your trays so the one on top goes to the bottom for the second round of baking. Bake 10-15 minutes more until golden brown.  

Turn off your oven and leave granola to cool completely. Do not store away until completely cool or you will lose that glorious crunch.
